About the chef
Chef Walda Collins
Walda Collins, fondly known as Chef CoCo, is a Marine Corps veteran with over 23 years of service. Throughout her travels from country to country, Walda found a passion for exotic flavors and cuisines. Upon her retirement from military service, she put those flavor patterns into action, attending the International Culinary School at the Art Institute and becoming a member of the United States Personal Chef Association.
After spending time in several restaurants and hotel kitchens, she soon realized that wasn’t her calling. Walda honed her skills as a servant leader into her passion for leading others into living healthier lives through good food and nutrition.
Chef CoCo then started her own company, Strategic AlignMint, LLC, where she traveled from San Antonio, to Dallas, Houston and Austin, working with celebrities, as well as professional athletes and helped people to strategically align their lives from the inside out. Walda believes that food is healing.
After taking a sabbatical and writing her first inspirational book, A Warrior’s Sword, Chef CoCo accepted an amazing opportunity and returned to the kitchen, starting her new bistro, CoCo Bistro, creating a simple, healthy breakfast and lunch concept that draws her patrons in to see what the buzz is all about.
Walda has been married to her husband Keith for 23 years and they have two sons, Zach and Keith,Jr.
